Hi all,

I would like a recipe for a silky smooth chocolate mousse. I have tried many but can not find one that is light and smooth.

Hi Julie and welcome to the forum,

here is a recipe that I use frequently


MOUSSE AU CHOCOLATE
4 Eggs
3 Egg Yolks
50g Sugar
375g Chocolate (any colour)
3-5 Leaves Gelatine
2pts Double Cream
3 Egg Whites
Whisk together the eggs, yolks and sugar over a bain-marie until you achieve a sabayon (approx. 75c).
Bloom the gelatine and then squeeze out excess water and add to sabayon.
Add the melted chocolate and mix well. Leaave to cool slightly.
Whisk the cream to ribbon stage and then fold into sabayon.
Whisk egg whites until siff and fold into mix.
Pour into moulds or glasses
Use 3 leaves of gealtine if pouring into glasses or 5 leaves if you are turning out of a mould.
